Aromas of blackberry and blue fruits, dark plums and baking spice of clove and dark vanilla pod. Smoky barrel scents and stony earthy qualities add complexity and depth. Fragrant and very enticing. Full bodied on the palate with flavors of dark berries and plums, spice and toasty barrel all reflect the bouquet. Bold tannins and medium+ acidity driver through foundation and mouthfeel. Violets and a gun-flint layer round out a delicious overall palate. Deliciousness in a glass!

Winemaking
Each variety was fermented separately, with daily working of the vats and attentive monitoring of the ferments. The new wines macerated with their skins for 5 to 7 days allowing the tannins and fruit to reach a balance point, before pressing and going to barrel. After 13 months in barrel the wines were carefully blended to make our Chatterer Merlot Cabernet.
