Chocolate Lava Cake With Fresh Berries and Cream

Perfect for any occasion, these chocolate lava cakes are decadent, moist and rich. Best served with whipped cream, berries and a glass of sparkling Rosé.


Serves 2

3.5oz dark chocolate
3.5oz butter
2 eggs
1.7oz caster sugar
0.7oz self raising flour
1/2 cup whipped cream
1/2 cup mixed fresh berries


Preheat the oven to 350°F. Grease 2 generous ramekins with a little melted butter and set aside.

Melt the dark chocolate and butter using either the microwave or a bain-marie, stirring regularly until melted and combined. In a large bowl, beat the eggs and caster sugar with an electric beater until the mixture turns pale and frothy.

Pour the melted chocolate into the egg mixture. Gently fold in the flour using a spatula.

Fill the ramekins ¾ full with the cake mix and bake in the oven for 10-12 minutes. 

Let cool for 1-2 minutes and then use a spoon to loosen the edges. Tip each cake upside-down onto a plate and tap lightly on the bottom of the ramekin - the cake should fall out onto the plate. Serve Immediately with cream and berries.
