Winemaker's Notes
Making a Sauvignon Blanc in Hawke's Bay is all about choosing the right time to pick. Of course, there's a lot of work done before then, but it's capturing the grapes when they are at their most intense that really defines what Sauvignon Blanc will taste like. Hand picked and whole bunch pressed then briefly settled before being transferred to barrel for fermentation. Fermented and aged in French Oak barrels, 15% new oak.
