Ceres Composition Pinot Noir 2014
Soft and full with harmoniously concentrated aromas of ripe, dark red berry fruits, licorice and earth, and nuances of spice and thyme herbs. Medium-full bodied, this is a plush and juicy Pinot Noir with dark berry, plum and herb flavors, and a fine-textured mouthfeel.

The 2014 vintage composition was made up of fruit 78% from Inlet Vineyard and 18% from Black Rabbit. Total maceration time ranged from 26 to 29 days. With 8 days cold soak, 9 days of fermentation followed by 9-11 days of post ferment maceration. ‘Punch down’ occurred once a day during cold soak, 1 – 2 times a day during ferment and then back to once a day post ferment. The Black Rabbit component had 25% whole cluster, whilst there was none in the fruit from Inlet. Ferment occurred with native yeast.
