Ceres Composition Pinot Noir 2016
Attractive and engaging bouquet of ripe red beery fruits – raspberry, plum and cherry; plenty of spice and mineral tones with a wild red rose perfume.
On the palate – dry, fruity with flavours that reflect the nose – wild raspberry and plum, moderate toasty oak and oak spice layer, loads of energy, fine tannins and plenty of acidity; youthful. Drink now and through 2027.
"This incredibly expressive Pinot Gris has quite a few different layers to it. Black cherry, plum, violets, and a savory, almost haunting wild herb character as a tonal note on the bouquet. It engages you and flourishes on the palate in the most amazing way." -Cameron Douglas (MS)
The 2014 vintage composition was made up of fruit 78% from Inlet Vineyard and 18% from Black Rabbit. Total maceration time ranged from 26 to 29 days. With 8 days cold soak, 9 days of fermentation followed by 9-11 days of post ferment maceration. ‘Punch down’ occurred once a day during cold soak, 1 – 2 times a day during ferment and then back to once a day post ferment. The Black Rabbit component had 25% whole cluster, whilst there was none in the fruit from Inlet. Ferment occurred with native yeast.
